More about Vegetable Spaghetti

Cucurbita pepo

Grow your own low calorie, gluten-free pasta with this unique heirloom winter squash variety.  Vegetable Spaghetti is a vining winter squash variety that produces enormous quantities of oblong, yellow-skinned squash with sweet yellow interiors.  To cook them, simply split the squash in half, remove seeds, and roast cut-side-down until the flesh has softened.  Then tease the "noodles" apart by scraping the sides with a fork.  We like to serve them with butter and parmesan, but you can get creative using them in pretty much any recipe that calls for noodles.  Approximately 90 days to harvest.  Each packet contains a minimum of 25 seeds.
