Tiger's Eye Shelling Bean

More about Tiger's Eye

Phaseolus vulgaris

Also known as Pepa de Zapallo, the Tiger's Eye bean originates from South America and still remains quite popular in parts of Italy.  These thin-skinned beans lend themselves to use in soups and refried beans as they are quite tender and have a tendency to fall apart when cooked.  Grow them yourself and you'll appreciate how quickly they cook (~35 minutes from fresh shelled beans to the table-no soaking necessary.)  Plants will occasionally send out short runners, but overall are bush type.  Approximately 80 to 90 days to harvest.  Each packet contains a minimum of 50 seeds.

Smooth, creamy texture.

I grew this variety 5 years ago. The harvest was huge. They have a wonderful, creamy texture when cooked. I always include them in the pot of calico beans with several other varieties with different tastes and textures. I am still using the stored harvest with no noticable change in taste or texture. Give these a little garden space and enjoy the harvest for several years.
